Harvest Muffins


HARVEST MUFFINS

1 ¾ cup sifted flour                ½ cup butter
1 tsp. soda                               1 cup sugar
1 tsp. cinnamon                       2 eggs
½ tsp. salt                                ¾ cup canned pumpkin
½ tsp. nutmeg                         ¾ cups chocolate chips
¼ tsp. ginger                           ¾ cup finely chopped walnuts (optional)
¼ tsp. cloves

Preheat oven to 375 degrees.  Combine flour with soda, salt and spices.  Cream butter.  Gradually add sugar, cream until fluffy.  Blend in eggs.  At low speed add dry ingredients alternating with pumpkin.  Stir in chocolate chips and ½ cup walnuts.  Pour into pan and sprinkle the remaining ¼ cup walnuts on top.  Bake for 15 to 20 minutes.
